Roasted Red pepper dip & Hot and Sticky Wings

Like I said before... my camera blew up so this is the best I have of my amazing roasted red pepper garlic dip & fall-off the bone juicy Hot and Sticky Wings... (see pathetic picture way below) I also made Artichoke-spinach dip in the crock.

I had my best girlfriends in town for the break so I had a small get together with a fire in my newly swept fireplace, and some fabulous food!

Here is the beginning of the chicken wings... YES real tasty wings from scratch! and SO EASY!

Hot and Sticky Wings:

Ingredients:

  • 4 pounds chicken wings
  • 1 (12 oz) jar pineapple reserves
  • 1 (18 oz) jar apricot reserves
  • ~3/4 cup ketchup
  • ~1/4 cup Franks Red Hot
  • 2 jalapenos - finely diced
  • 1 packet hot taco seasoning (or original flavor)

Steps:

  1. Light broiler; line baking sheet with aluminum and set aside.
  2. Rinse wings with cold water, and pat dry with paper towel. Set on baking sheet skin side up.
  3. Salt-n-pepper the chicken and broil for 10-12 mins
  4. Slice wings in half (into drum and wing) and cut off tip of wing and discard. Place all drums and wings in 4-quart crock pot
  5. In a food processor combine ingredients, blend then pour over wings in crock, stir to coat
  6. Cook high for 2-1/2 to 3 hours
  7. Remove and cook in 400F oven for 15 mins for crispier wings.

Note: Leave jalapeno seeds in for extra hotness!



Roasted Red pepper dip:

Ingredients:

  • 1-1/2 jar roasted red peppers (approx 11 oz)
  • 2 scallions
  • 2 cloves garlic
  • 1 TBsp lemon juice
  • 1 cup cream cheese

Steps:

  1. Put everything in food processor and blend until fully pureed
  2. Pour mixture into bowl and chill until needed
  3. Best served with Pita chips or triscuits

Sorry about your camera! The food sounds delicious--I love how the wings are sweet and spicy. Food is always great when you get together with friends!
I use a Nikon D40 for my photos.

I'm excited to see all the recent posts. I def want to try the dip and crock pot recipe. YUMMO!!! I do wish you had posted a picture of the 'finished' wings!
