Healthy Veggie Stew

Ingredients:
  • 32-38 oz water
  • Bunch of Celery
  • Head of Cabbage
  • 2 small cans diced tomatoes/1 large can (feel free to use seasoned ones)
  • 2 small onions
  • 1 cup scallions
  • 4 packets Lipton's Onion Soup Mix
  • Brown rice (optional)

Steps:

  1. In a large pot, start heating water up. Add Lipton's Onion Soup mix and start chopping up veggies.
  2. Chop everything as desired; tip: some food processors have a different blade which turns them into slicing machines!!
  3. Throw all chopped veggies into pot and cook until everything is nice and tender. Approx. 2 hours.
  4. For a healthy veggie stew leave as is; Add brown rice if desired.
  5. Makes TONS and freezes well!

Thanks for the leftovers! I'm serving them to my hubby tonight- he won't even know he's eating healthy because it's so delicious :)
